𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
2 medium acorn squashes, halved and seeds removed 🎃
2 tablespoons unsalted butter 🧈
2 tablespoons brown sugar 🍬
1 tablespoon maple syrup 🍁 (optional)
1/2 teaspoon ground cinnamon 🌿
1/4 teaspoon ground nutmeg 🍂
Salt and pepper to taste 🧂
Fresh parsley or thyme for garnish 🌿
𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:
1. Preheat the oven 🔥: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
2. Prepare the acorn squash 🎃: Place the acorn squash halves, cut side up, on the prepared baking sheet. Sprinkle the inside of each half with a pinch of salt and pepper 🧂.
3. Make the glaze 🍬: In a small saucepan, melt the butter 🧈 over medium heat. Stir in the brown sugar 🍬, maple syrup 🍁 (if using), cinnamon 🌿, and nutmeg 🍂 until smooth and bubbly.
4. Brush and roast 🍂: Generously brush the inside of each squash half with the butter-sugar glaze. Place the baking sheet in the preheated oven and roast for 45-50 minutes, or until the squash is fork-tender and caramelized around the edges. Baste the squash with the glaze once or twice during roasting for extra flavor.
5. Serve and enjoy 🍽️: Once roasted, remove the acorn squash from the oven and sprinkle with fresh parsley or thyme 🌿 for a pop of color and flavor. Serve as a delicious side dish for any fall meal! 😋
